Coconut Macaroons

INGREDIENTS

  • 14 oz sweetened coconut flakes
  • c granulated sugar
  • 6 tbsp all-purpose flour
  • ¼ tsp salt
  • 4 egg whites
  • 2 tsp grated lime peel
  • 1 tsp vanilla extract

METHOD

  • Preheat oven to 325°F
    In a large bowl, mix the coconut, sugar, flour, and salt together
    Add in the egg whites and grated lime peel
    Mix until well combined
    Use two tablespoons to form macaroons and drop onto baking tray
    Should yield about 2 dozen macaroons
    Bake until golden brown - about 20 minutes
    Remove and cool on a wire rack
